Ingredients

  • 1/4 cup of brown sugar
  • ½ cup of soy sauce
  • 2 lbs boneless chicken breasts or leg quarters
  • 2 tablespoons of cider vinegar
  • ½ teaspoon of ground ginger
  • 1 clove minced garlic
  • ⅛ teaspoon of pepper
  • 2 teaspoons of cornstarch
  • 2 teaspoons of water
 

Instructions

Start with placing the chicken in the crockpot.

Then combine sugar, soy sauce, vinegar, ginger, garlic, and pepper in a medium bowl. Pour over chicken and cook on low for 4-5 hours.

And remove chicken from the slow cooker, chop it into cubes, and set aside.

Then strain the cooking liquid into a skillet and bring it to a boil.

Next, in a small bowl whisk cornstarch and water until combined.

Add the cornstarch mixture gradually to the boiling liquid, then lower the heat to a simmer. And allow the sauce to thicken for 2 to 3 minutes then toss the chicken back in.

Coat chicken with sauce and let heat through.
