To make this simple Red Velvet Cheesecake recipe you'll need the following ingredients:

  • 1/2 cup sugar (white)
  • ½ cup shortening
  • 2 tablespoons cocoa powder
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla  (extract)
  • 1 cup buttermilk
  • 2 eggs
  • 1/2 teaspoons bicarbonate of soda
  • 2 1/2 cup all-purpose flour, sifted
  • 1 tablespoon. white distilled vinegar

Icing:

  • 5 tablespoons flour (all-purpose)
  • 1 cup room temperature butter
  • 1 teaspoon vanilla extract
  • 1 cup white sugar

Instructions:

Follow these directions to prepare this easy red velvet cheesecake:

First preheat the oven to 350 ℉ (175 degrees C). Then two 9-inch round pans should be greased.

And combine shortening and 1 1/2 cup sugar in a mixing bowl and beat until light and fluffy. And add the eggs then beat them thoroughly.

And combine the cocoa powder and red food coloring in a paste then stir it into the whipped mixture. Combine the salt,  buttermilk, and 1 teaspoon vanilla in a mixing bowl.

Then add the flour and buttermilk mixture to the batter, and mixing just until combined.

And combine the baking soda and vinegar in a mixing bowl and gently incorporate into the cake batter. And after this, don’t stir or beat the batter.

And Pour the batter into the pans that have been prepared. Then bake for 30 minutes in a preheated oven, or until a tester inserted into the cake comes out clean. And on a wire rack, cool the cakes entirely.

To make icing, follow these steps. And cook, stirring constantly, five tablespoons flour and milk over low heat until thickened

Allow to cool completely before using. And while the mixture cools, cream together butter, 1 cup sugar, then 1 teaspoon vanilla extract until light and fluffy.

And add the cooled flour mixture then beat until the frosting is smooth and spreadable. And when the cake layers are entirely cold, make sure frost them.
