Ricotta Cheese Cookies
Ricotta Cheese Cookies are done. This recipe was easy, with consistently delicious results. I’ve made these cookies for several years now. All enjoyed with raves from the company. The recipe makes enough to share as well as for parties and cookie tables at buffets.
Thanks to someone on here I added the candied orange rinds this time. Added a nice texture and flavor. (the glaze is as follows: Powder sugar mixed with Almond flavoring and just enough heavy cream to loosen the powdered sugar into a glaze. (you can use milk or water, but the cream makes it richer tasting) Then I dip the cookies and put them on a cooling rack to have the excess drip off.)

Ricotta Cheese Cookies Ingredients
- 1/4 cup ricotta cheese (Diane uses 1/2 cup)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup sugar
- 1/4 pound butter (one stick -4 softened)
- 1 egg
- 2 cups sifted flour* (may need to add an extra 1/2 cup if the dough is too wet)
- ( I use self-rising flour and omit the baking soda
Instructions For Ricotta Cheese Cookies Recipe
Soften the butter, and blend with ricotta until combined.
Add vanilla and mix to Incorporate
Add sugar, and mix to incorporate
Add egg, and mix to incorporate
Next, slowly stir in dry ingredients then blend well.
Bake @ 350 for 10 min.
Ice with powdered sugar icing then top with sprinkles.
