How To Make Gluten Free Almond Cake

These are the ingredients you'll need to make this recipe for Almond Flour Cake: 

Almond Flour Cake Ingredients

  • 1 Tbsp of lemon zest- 15 g
  • 1 tsp of almond extract- 7 ml
  • 1/4 cup of toasted almonds- 50 g
  • 1 1/2 cups of almond flour- 170 g
  • 4 eggs (at room temperature)
  • 3/4 cup of sugar- 150 g

Instructions For Almond Flour Cake

First, In a bowl, beat egg yolks and sugar until light and fluffy (6 minutes).

And add almond flour, lemon zest then almond extract to the bowl and fold using a spatula.

And in another bowl, beat egg whites with salt until stiff peaks form (6 minutes).

Then add the egg whites in batches to the almond mixture and mix until combined, do not over-mix!

And prepare an 8-inch/21 cm springform pan with parchment paper and oil. Pour the batter inside and bake for 36 minutes at 350F/180C. 

Garnish with toasted almonds and a lemon slice. Enjoy!
