Stuffed Pepper Soup in the Slow Cooker


Slow Cooker Stuffed Pepper Soup is one of the best and easy slow cooker recipes you’ll ever try to make. And this easy stuffed pepper soup recipe is also one of my favorite budget slow cooker meals, also its great for feeding the entire family on a budget! try to make some tonight or freeze some for a later time.


Ingredients 

  • 1 lb of ground beef
  • 1 c. of onion chopped
  • 2 c. of bell peppers chopped
  • 15 oz. can of diced tomatoes with garlic and onions
  • 15 oz. can of tomato sauce
  • 3 c. of beef broth
  • ½ tsp of oregano
  • ½ tsp of basil
  •  Pepper and salt to taste
  • 1 c. of white rice

Instructions

Start by browning your meat and drain completely. And place the drained meat into the slow cooker.

And add in the chopped bell pepper and chopped onion.

Next, stir in the can of diced tomatoes, the beef broth, and the tomato sauce.

Then mix in the basil and oregano, as well as pepper and salt to taste.

And pour in one cup of rice, then place the lid on the slow cooker, then cook on low for 6-8 hours.

Next, stir and serve immediately, or store in an airtight container in the fridge, or freezer for later use.
