Spicy Bison Chili Recipe


Slow Cooker Spicy Bison Chili recipe My husband has always wanted to go on a big game hunt. So when a friend asked him to go on a bison hunt, he jumped at the chance!

After the successful hunt, the meat was split equally, yielding 860 pounds in total.

As a result, I was left with the task of creating various bison recipes to free up room in our overloaded freezer. This chili is one of our favorite recipes that I created.


INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1-pound ground bison
  • 1 medium onion, diced
  • 5 medium Anaheim chiles, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin powder
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cloves
  • One 14-ounce can of diced tomatoes
  • 2 tablespoons tomato paste
  • Two 14-ounce cans of chicken broth
  • One 7-ounce can of chipotles in sauce
  • Two 15-ounce cans of black beans
  • Garnishes: sour cream, tortilla chips


Directions

Heat the oil in a 6-quart Dutch oven. Add the ground bison, diced onion, chiles, and garlic. Cook until the meat is browned, then add the salt and all spices.

Stir in the diced tomatoes, tomato paste, and chicken broth. Add the chipotles, one at a time, until you achieve the right level of spiciness.

Simmer over low heat for 30 minutes, then add the black beans.

Cover and simmer for an additional 30 minutes over low heat.

Serve with a dollop of sour cream and tortilla chips.
