The Dark Truth Stout Chili Recipe

I developed this recipe as an award-winning competitive home cook born with autism. It takes less than an hour to make this tasty chili.

I took inspiration from my Red-Eye Cold Brew Chili, and it is unique because it uses Dark Truth Imperial Stout® from the Boulevard Brewing Company to bring coffee and hoppy notes to the flavor profile.

INGREDIENTS

  • 2 pounds of ground beef
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • One 15-ounce can of chili beans, drained and slightly rinsed (I use Bush’s®)
  • One 15-ounce can of fire-roasted tomatoes (I use Hunt’s®)
  • 1 bottle imperial stout beer (I use Dark Truth Imperial Stout® by Boulevard Brewing Company)
  • Garnishes: cheddar, onions, sour cream, hot sauce

Directions for The Dark Truth Stout Chili

In a pot, brown the beef, onion, and bell peppers until the meat is rendered down. Drain the excess fat and return it to the pot.

Add the garlic, spices, beans, tomatoes, and beer and stir. 

Bring the mixture to a boil, then reduce the heat to medium and simmer for 30–35 minutes or until the chili has reduced down.

Divide the chili into bowls and top with cheddar, onions, sour cream, and hot sauce.
