Grapefruit Crème
Grapefruit Crème Recipe.
We use shortening here to bring a luscious mouthfeel while amplifying the flavor of grapefruit.
Butter has too much flavor and would steal the show!
Citric acid helps support the grapefruit pucker.
Ingredients:
Makes about 225g (1¼ cups)
150g confectioners’ sugar 1¼ cups
45g shortening ¼ cup
0.5g kosher salt ⅛ tsp
0.25g citric acid pinch
35g grapefruit juice 2 T + 1 tsp
3g grated grapefruit zest 1½ tsp
Instructions:
In the bowl of a stand mixer fitted with the paddle attachment, cream together the confectioners’ sugar, shortening, salt, and citric acid on medium for 1 minute until smooth.
Scrape down the sides of the bowl with a spatula.
Add the grapefruit juice and zest, and mix on low speed about 1 minute until well combined.
Use immediately or keep in an airtight container in the fridge for up to 1 month.
