Coffee Fudge Recipe Easy.

The cream of tartar helps bridge the chocolate and coffee and softens the acidic notes. It also helps keep the fudge super glossy.
 
If in doubt, strain your fudge to ensure that it’s velvety smooth, and if you’re in a hurry, refrigerate the fudge to cool and thicken it completely.


Coffee Fudge Recipe Easy



Ingredients: 

Makes about 315g (1¼ cups)
  • 140g sugar ⅔ cup
  • 110g heavy cream ½ cup
  • 4g vanilla extract 1 tsp
  • 84g semisweet chocolate chips
  • 3 oz (⅓ cup)
  • 20g cocoa powder ¼ cup
  • 9g instant coffee 2 T + 1 tsp
  • 2g kosher salt ½ tsp
  • 0.5g cream of tartar pinch
Instructions:

In a heavy-bottomed medium saucepan, combine the sugar, heavy cream, and vanilla and bring to a boil over medium-high heat. 

In a heatproof bowl, combine the chocolate, cocoa powder, instant coffee, salt, and cream of tartar. Pour the saucepan’s hot contents into the bowl and let sit for 30 seconds. 

Whisk all ingredients together until smooth. If the mixture is at all lumpy, put the entire mixture back in the saucepan over medium heat and stir constantly until smooth. 

Let the fudge cool completely before using. It will keep in an airtight container in the fridge for up to 1 month.
