Dulcey is a caramelized white chocolate coating made by Valrhona. It’s EPIC, especially in this snap. Take to the Internet to get your hands on it.

Dulcey does not need any additional oil like the other coatings because it has enough cocoa butter in its formula to stay fluid and thin in its melted phase to coat the snaps.

Caramel Chocolate Coating Recipe



Makes about 1 cup (enough to coat twelve 3-inch snaps)


Ingredients:
  • 340g Dulcey 12 oz
Instructions:

In a microwave-safe medium bowl, melt the Dulcey in the microwave in 30-second spurts, stirring after each, until smooth, about 1½ minutes (but every microwave heats at different strengths).

Use a heat-resistant spatula to ensure the mixture is fully melted and homogenous. Keep warm, or remelt if necessary before using.
