4-5 pounds beef brisket

2 teaspoons kosher salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 cup beef broth

1/2 cup dry red wine

2 tablespoons tomato paste

2 tablespoons olive oil

3 onions, thinly sliced

4 carrots, peeled and cut into chunks

4 cloves garlic, minced

Fresh parsley for garnish (optional)

Instructions:

In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary. Rub the spice mixture evenly over the brisket.

Heat olive oil in a large skillet over medium-high heat. Sear the brisket on all sides until browned. Transfer the brisket to the crock pot.

In the same skillet, sauté the onions and garlic until softened. Add tomato paste and cook for an additional minute.

Deglaze the skillet with beef broth and red wine, scraping up any browned bits from the bottom. Pour this mixture over the brisket in the crock pot.

Add carrots around the brisket in the crock pot.

Cover and cook on the high setting for 4-5 hours or until the brisket is tender.

Once done, remove the brisket and let it rest for a few minutes before slicing.

Serve the sliced brisket with the vegetables, and if desired, garnish with fresh parsley.
