Primavera pasta salad is a delicious and easy recipe, you can make this primavera salad at your home in just a few minutes, with any seasonal veggies you love. More than this it's delicious any time of year. Also, it's a great way to eat more veggies.


Pasta salad is a great recipe! you can tweak it a little by blanching the asparagus and broccoli with the pasta for the last 2 or 3 mins, Also make more dressing and called for Incase of pasta absorbing it all. Great salad recipe then you can really make it your own.


How To Make Primavera Pasta Salad Recipe

These are the ingredients you'll need to make this recipe for Pasta Salad: 

Ingredients

  • 1 tablespoon of chopped chives 
  • 1 tablespoon o chopped fresh parsley 
  • 2 teaspoons of chopped fresh mint 
  • 2 lemons, zested then juiced 
  • 1 cup of sliced asparagus (2-inch pieces)
  • 1/2 cup of matchstick carrots 
  • 1 leek, and white and light green parts, thinly sliced 
  • Freshly ground black pepper 
  • 1/4 cup of sour cream 
  • 3 tablespoons of freshly grated Parmesan 
  • 1 cup of broccoli florets, broken into small pieces 
  • 1 cup of cherry tomatoes, halved 
  • 1/2 cup of whole milk, and plus more if needed 
  • Kosher of salt
  • 2 pounds of fusilli 
  • 1 cup of mayonnaise 
  • 1 cup of frozen peas, thawed 

Instructions

Start by Bringing a large pot of salted water to a boil. And add the pasta then cook according to the package instructions. And drain then rinse under cold water until no longer hot, and set aside.


And to make the dressing, combine the mayonnaise, chives, mint, milk, sour cream, parsley, 1 teaspoon salt, lemon zest and juice, 1/2 teaspoon pepper then 2 tablespoons Parmesan in a small bowl. Then set aside. And before tossing, splash in more milk if needed for thinning.


After that in a large bowl, combine the pasta, carrots, peas, asparagus, broccoli, leeks, and tomatoes.  Then pour over the dressing and toss to coat. And top with the remaining tablespoon of Parmesan then some black pepper. Then refrigerate for at least 4 hours and up to overnight, or as you like. Enjoy!
