How To Make the Best Pozole Recipe
Ingredients For Pozole Recipe
- 2 large chicken breasts
- 4oz California chili powder
- 4oz New Mexico Chili powder
- All to taste Salt, garlic salt, onion powder, garlic powder, pepper
- 1/2 a large can of Hominy
- Chicken broth (or water to Fill the line)
- Garnish; cabbage, avocado, limes, radish, diced onion, oregano (or Menudo blend)
Instructions For Pozole Recipe
I cooked chicken in broth in IP for 15mins on manual- natural pressure release 15mins
Rinse gunk off of chicken and shred, return to pot and add seasonings to what looks colorful and smells like spices, add half a large can of hominy that’s been rinsed and drained and cover with stock
Cook for several mins on manual to bring to temp, taste the broth re-season with what you think it’s missing.
Put on the lid, restart to soup setting for 30mins
Cut Garnishes, taste test, and serve w/ corn tortillas.
I make green pozole from scratch, it involves a lot of cutting, roasting, blending (jalapeño/poblano/tomatillo/cilantro/onion), and pretty much the same cooking method.
