Best Beef Stroganoff Recipe Slow Cooker

Ingredients

  • 600 g / 1.2 lb of the scotch fillet steak / boneless rib eye
  • 2 tbsp of vegetable oil, divided
  • 1 large onion, sliced (or 2 small onions, sliced)
  • 300 g / 10 oz of mushrooms, sliced (and not too thin)
  • 40 g / 3 tbsp of butter
  • 2 tbsp of flour
  • 2 cups / 500 ml of beef broth, preferably salt reduced
  • 1 tbsp of Dijon mustard
  • 150 ml / 2/3 cup of sour cream
  • Pepper
  • Salt

For serving:

  • 250 – 300 g / 8 – 10 oz of pasta or egg   noodles of choice
  • Chopped chives

Instructions

Start by using your fist ( or mallet or rolling pin) to flatten the steaks to about 3/4cm / 1/3″ thick. Then slice into 5mm / 1/5″ strips (make sure to cut long ones in half), then discard excess fat.

Then sprinkle with a pinch of pepper and salt.

And heat one tbsp of oil in a large skillet over high heat. Scatter half the beef in the skillet, and quickly spread it with tongs. Then leave untouched for 31 seconds until browned. 

Turn beef quickly (as best you can!). Leave untouched for 30 seconds to brown. Immediately remove onto a plate. Don't worry about the pink chips, they will be raw inside.

After that add the remaining one tbsp of oil then repeat with the remaining beef.

Then turn the heat down to medium-high. And add butter, and melt. Then add onions, cook for one minute, and add mushrooms.

Next, cook mushrooms until golden. And scrape the bottom of the frying pan to get all the golden bits off (this is flavor!).

And add flour, then cook, stirring, for one minute.

Add half the broth while stirring. Once incorporated, add the remaining broth.

And stir, add sour cream then mustard. And stir until incorporated (if it looks split don’t worry, sour cream will “melt” as it heats).

Then bring to a simmer, then reduce heat to medium-low. Once it thickens to the consistency of pouring cream (For 3 to 5 minutes), adjust pepper and salt as per taste.

And add the beef back in (including plate juices). Simmer for about one minute, and remove from stove immediately. 

Then serve over pasta or egg noodles, then sprinkled with chives if desired. Enjoy!
