Slow Cooker Mexican Goulash Recipe


I love making Mexican goulash because it is so simple. It reminds me of the meals my mom made when I was a little girl. Mexican goulash was always a go-to for her, but she used canned chili con carne.

This was before we were diagnosed with celiac disease. Now that I can’t eat gluten or most canned chili con carne, I have had to get creative on how to recreate this dish with just a slow cooker.

This meal is a great way to use your leftover ground beef after taco night, and it only takes 2 hours!


INGREDIENTS

  • ½ pound ground beef, cooked
  • Two 15.5-ounce cans of kidney beans, drained
  • One 15-ounce can tomato sauce
  • 15 ounces salsa
  • Gluten-free tortilla chips
  • Lettuce, shredded
  • Garnishes: sour cream, additional salsa, shredded cheddar cheese, ranch, lime juice

Directions

Place the beef, beans, tomato sauce, and salsa in a slow cooker. Cook on high for 2–3 hours.

Crush the tortilla chips onto plates, then add some shredded lettuce. Top this with the chili.

Garnish with sour cream, salsa, cheese and fresh lime juice and ranch if desired
