Easy Chili Pasta Casserole Recipe

If you are craving a casserole but you also always want chili, this is a perfect choice. Adding in that sour cream at the end is a must! This is a huge family favorite.


  • ½ tablespoon canola or vegetable oil
  • 1 whole onion, chopped
  • 1 pound ground beef
  • 1 dash salt
  • 1 dash of black pepper
  • ½ pound pasta (I use small shells or elbows)
  • 15 ounces tomato sauce
  • One 14.5-ounce can of diced tomatoes and green chiles
  • One 15-ounce can of kidney or black beans, rinsed
  • 1 ½ tablespoon chili powder
  • 2 teaspoons cumin
  • 3 dashes of cayenne pepper
  • ¼ cup water
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream
  • 4 tablespoons green onions, chopped


Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 9- inch by 13-inch pan.

In a large skillet, add the oil and onions and cook for 5 minutes.

Add the beef to the skillet and cook until brown.

While cooking the beef, cook the pasta in a separate pan. Once the pasta is cooked, drain and set aside.

Add the tomato sauce, diced tomatoes and green chiles, beans, salt, pepper, chili powder, cumin, cayenne, and water to the skillet. Mix and cook for 5 minutes.

Add the pasta to the mixture. Pour the entire mixture into the greased pan. Sprinkle with cheese. Bake for 20 minutes.

Serve topped with sour cream and green onions.
