Black Bean and Chorizo Chili Recipe Best slow cooker


After living in Los Angeles for 12 years and now living in Austin, we’ve become obsessed with chorizo. We love the spiciness and the texture, and we’re suckers for all things pork. We’re fans of the combination of black beans and chorizo, so we came up with a chili recipe that combines both.

The best part of this recipe is the incredibly bold flavors, despite having few ingredients, and that it’s super simple to make, which is perfect for the beginner cook.


INGREDIENTS

  • 2 teaspoons olive oil
  • 1 pound spicy chorizo
  • 1 red onion, finely diced
  • 2 red bell peppers, medium diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 teaspoons salt
  • 2 cups chicken stock
  • 1 lime, zest and juice
  • Three 15.5-ounce cans black beans
  • 1 teaspoon fresh oregano, chopped
  • Garnish: Mexican crema

Directions

Place a pot over medium-high heat and add the olive oil and chorizo. Brown for about 5 minutes.

Lower the heat to medium and add the onions. Sauté for 3 minutes.

Add in the bell pepper, garlic, cumin, smoked paprika, dried oregano, and salt. Sauté for 3 minutes.

Deglaze with the chicken stock. Add the black beans, lime juice, and lime zest, bring the mixture back to a boil, and then lower it to a simmer. Simmer for 90 minutes.

When the chili is done, stir in the fresh oregano. Garnish with Mexican crema.
