Jalapeño Popper Chicken Chili Recipe


INGREDIENTS

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 4 jalapeños, diced and seeds removed
  • 4 cloves garlic, minced
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground mixed peppers (or black pepper)
  • 2 teaspoons chili powder or other spice blend (I use Penzeys
  • Arizona Dreaming®
  •  seasoning)
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • One 15-ounce can diced tomatoes in juice
  • 1 ½ cups chicken broth
  • 2 cups cannellini beans
  • 2 cups corn
  • 8 ounces cream cheese
  • 4 slices bacon, cooked and crumbled
  • ¼ cup sharp cheddar cheese

Directions

In a large saucepan, heat the olive oil over medium heat. Add in the onion, red pepper, jalapeños, and garlic and sauté for 5–7 minutes or until soft.

Sprinkle the chicken with the salt and pepper. Add the chicken to the pan and lightly brown it on all sides.

Add in the spices (chili powder, cumin, and paprika). Stir to combine the spices with the chicken and vegetables.

Stir in the diced tomatoes, chicken broth, cannellini beans, and corn. Simmer for 30 minutes. Add in the cream cheese and stir until melted.

Serve topped with crumbled bacon and cheddar cheese.
