Papa Youngblood’s Chili Recipe

I love chili, so I experimented until I found my own perfect chili. It’s not a quick-to-make recipe, but it is easy.

I toned down the heat, but it does have a bite. My motto is, if it ain’t hot, it’s just soup!

How To Make Papa Youngblood’s Chili Recipe

To make this recipe you'll need the following ingredients:

Ingredients for Papa Youngblood’s Chili

  • 2 pounds rib eye steak
  • Salt, to taste
  • 1 teaspoon pepper
  • 2 tomatillos
  • 2 sprouts green onion
  • 2 jalapeños
  • 2 serranos
  • 2 yellow chiles
  • 1 pound ground beef (steak)
  • 1 tube of beef chorizo
  • 1 tablespoon butter
  • 1 onion, diced
  • 1 bunch of cilantro, chopped
  • 5 tomatoes, diced
  • One 15-ounce can of kidney beans
  • 1 tablespoon red wine vinegar
  • 4 slices of American cheese (I use Kraft®)
  • ½ cup breadcrumbs
  • 1 shot of tequila (I use Don Julio 1942®)
  • 1 tablespoon New Mexico chile powder (or to your taste)
  • 2 serranos
  • Juice of 1 lemon

Instructions for Papa Youngblood’s Chili


Season the steaks with salt and pepper. Barbecue on a grill until brown on the outside. Charred is better, but make sure they’re rare on the inside. Remove from the heat and set aside.

Grill the whole tomatillos, green onions, and all the chiles until charred. Then remove them from the heat and allow them to cool.

In a large pot on high heat, combine the ground steak and chorizo with 1 tablespoon of butter. Cook until the ground steak is brown. Remove some excess fat, making sure to leave at least some in.

Cut the grilled steak into small cubes and add it to the chorizo and ground beef mixture. Stir and turn the heat to low.

Dice the grilled tomatillos, green onion, and chiles. Combine these with the diced onion, cilantro, and tomatoes in a food processer. Give it a few bursts to chop everything more finely to make a sauce. Add this to the meat in the pot.

Add the kidney beans, red wine vinegar, and lemon juice. Stir well

Add the cheese and stir well.

Add the breadcrumbs and stir well. Bring the whole mixture to a boil, stirring often. Add chile powder and stir well.


Turn the heat to low and simmer for 2 hours. Stir occasionally to make sure the bottom does not burn. Salt to taste.

Add the shot of tequila and stir. Continue to simmer for another hour. Let sit for 30 minutes. Then eat!
