How To Make Crispy Baked Buffalo Wings

Ingredients

Buffalo Wings

  • vegetable oil, as needed for oiling wire rack
  • 2 pounds chicken, wings, and drummettes
  • 2 teaspoons baking powder
  • 1 ½ teaspoon kosher salt, divided
  • 1 ½ teaspoon black pepper, divided
  • 1 cup hot sauce, Crystal or Frank's RedHot recommended
  • 1 teaspoon Worcestershire sauce
  • 1 ½ teaspoons cornstarch
  • 1 tablespoon water
  • 1 tablespoon unsalted butter

Ranch Sauce

  • ½ cup nonfat plain Greek yogurt
  • 2 tablespoons water, plus more as needed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon kosher salt, plus more as needed
  • ½ teaspoon dijon mustard
  • ¼ teaspoon black pepper, plus more as needed
  • 1 tablespoon chopped chives

Instructions 

Buffalo Wings

Adjust oven rack to the middle position. Preheat to 450°F (232°C).

Thoroughly dry chicken wings and drummettes between paper towels.

Line a large baking sheet with foil. Set a wire rack inside and coat both sides with vegetable oil.

In a large bowl whisk together baking powder, 1 teaspoon salt, and 1 teaspoon black pepper.

Add chicken to the bowl and mix to evenly coat the surface.

Evenly space the chicken on the wire rack.

Bake for 20 minutes. Flip and bake for 15 minutes.

Flip and bake until skin is golden brown and crisp, 12 to 15 minutes. Remove from oven and set aside.

Buffalo Sauce

In a small saucepan add hot sauce, Worcestershire sauce, ½ teaspoon salt, and ½ teaspoon pepper. Whisk to combine.

Bring sauce to a low boil over medium heat.

In a small bowl combine cornstarch and water. Immediately add to the sauce and whisk to combine. Constantly whisk and cook the sauce until thickened, 15 to 30 seconds.

Turn off heat and whisk in butter until melted and fully incorporated into the sauce.

Immediately transfer hot chicken wings to a large bowl and toss with enough hot sauce to coat.

Ranch Sauce

In a small bowl whisk together yogurt and 2 tablespoons of water. Add up to 1 tablespoon more water if desired to thin the sauce.

Add to the bowl garlic powder, onion powder, ¼ teaspoon salt, mustard, black pepper, and chives.

Taste and season with more salt and pepper as desired. Enjoy!
