Carrot Cake is one of the best healthy cakes, and this is my favorite recipe for homemade carrot cake! This cake is so easy to make, perfectly moist, and easily homemade... And when you know how easy it is to make a carrot cake from scratch, you’ll want to make it again.

Honestly, carrot cake is an incredible dessert and I think it should be enjoyed all year long. especially when it comes to this healthy carrot cake recipe!

How to make carrot cake ??

Ingredients

The ingredients needed for this easy carrot cake recipe are simple and I bet you have quite a few of them already in your kitchen!

  • 6 cups of grated carrots
  • 1 cup of brown sugar
  • 1 tsp of salt
  • 8 oz can crushed pineapple, drained
  • 1/4 tsp of nutmeg
  • 1 cup of raisins
  • 3/4 cup of chopped walnuts
  • 4 tsp of cinnamon
  • 1 1/2 cups of white sugar
  • 1 cup of vegetable oil
  • 3 tsp of vanilla
  • 4 eggs
  • 3 cups of flour
  • 1 1/2 tsp of baking soda

Instructions

The Instructions for this carrot cake recipe are simple! And all you need to do is follow these instructions then you can absolutely make this tasty cake!

Then in a medium bowl add the grated carrots then brown sugar, and then stir to combine, then set aside for 1 hour. And after an hour you can stir in the raisins. And preheat the oven to 350 then spray 2, 10" cake pans with cooking spray.

Beat eggs with an electric mixer for minutes, until the color will be a light yellow. Add the sugar, oil, and vanilla and beat to combine.

Next, stir in the pineapple then set aside. And in a separate bowl combine the flour, salt, baking soda, and cinnamon. And add the flour mixture to the wet ingredients then stir until just combined.

Then lastly, stir in the carrot mixture and then the walnuts. And pour into prepared pans, and bake for 46 to 51 minutes or until a cake tester comes out clean.

And cool in pans for 31 minutes and remove then cool completely on wire racks, and frost with cream cheese frosting.

Cream Cheese Frosting

And in a large bowl beat 1 1/2 blocks of softened cream cheese, 2 sticks of softened unsalted butter, then 2 tsp vanilla together until creamy. And add 2 cups of confectioners sugar then beat until smooth.
