Party bars
Whenever a friend is planning to come visit for the weekend, I ask them what they request for dessert for our slumber party.
If they don’t have an answer, I ask them to name their favorite cookie, their favorite salty/cracker bit, their favorite nutty snack, and their favorite melty thing.
So, I have a friend named Kevin. And every time he’s planning a visit, I grab the phone from my husband, and before I even ask, he shouts the same four things: Graham crackers! Ritz crackers! Coconut! Butterscotch!
Also, every time Kevin comes to visit, it’s an absolute party. So these bars are named in honor of him.
→ Substitute any cookie, cracker, nutty thing, or melty element for the graham, Ritz, coconut, and butterscotch, respectively.
The sweetened condensed milk is essentially the glue that bonds them all together like dessert magic.
→ In case of a larger crowd, double this recipe and bake in a 9 × 13-inch pan, increasing the bake time to 30 to 35 minutes.
Ingredients:
Graham Crust
80g graham cracker crumbs ⅔ cup (5 crackers ground down)
56g unsalted butter, melted 4 T Party Layers
75g sweetened shredded coconut ¾ cup
170g butterscotch chips ¾ cup
85g Ritz crackers, lightly crushed 1¾ cups (26
crackers)
375g sweetened condensed milk 1¼ cups
Instructions:
Heat the oven to 375
Graham Crust: In a large bowl, mix together the graham cracker crumbs and melted butter with a spatula until well combined.
Transfer the graham crust mixture to the greased baking dish. Using your palm and fingertips, firmly and evenly press it in, fully covering the dish’s bottom.
Party Layers: Scatter each party layer down first the shredded coconut atop the pressed graham crust, then the butterscotch chips, and then the Ritz crackers.
Pour the sweetened condensed milk into a spouted measuring cup and then drizzle over the Ritz, zigging and zagging back and forth, covering the entire surface.
The sweetened condensed milk will spread evenly on its own once it hits the heat of the oven, so don’t stress too much.
Bake at 375°F until the crackers have toasted slightly and the sweetened condensed milk has started to caramelize for 20 to 25 minutes.
Cool completely in the pan. Cut into 9 squares. Then cut each square in half to make 18 rectangles. Store in an airtight container or plastic wrapped on the counter for up to 5 days or in the fridge for up to 2 weeks.
