Ice Cream Cookie Cups
You would think that after years of baking and recipe developing, I would get used to doing dishes, but the truth is: I haven’t.
I will go to pretty elaborate lengths to avoid scrubbing and sudsing, which is what makes these individual cookie ice cream cups so brilliant in my book.

Ingredients:
- 6 soft cookies
- 3 cups of your favorite ice cream
- ½ cup topping: nut butter, chocolate sauce, chocolate chips, sprinkles, jam
Instructions:
Pan-spray 6 cups of a muffin tin.
Smoosh 1 cookie into the base of each cup.
Top each cookie with a medium scoop of ice cream, smoothing to fill the cup. Dip a spoon in water to help manipulate the ice cream more easily.
Leave a small divot in the top of each mound of ice cream. Fill the divot with a generous tablespoon of topping.
Place them in the freezer to set and pop them out when you are ready to party.
