Grapefruit White Chocolate Coating
Makes about 1 cup (enough to coat twelve 3-inch snaps)
Ingredients:
340g white chocolate chips 2 cups
8g canola oil 2 tsp
6g grated grapefruit zest 1 T (packed)
red food coloring 4 drops
yellow food coloring 2 drops
Instructions:
In a microwave-safe medium bowl, melt the white chocolate chips and oil in the microwave in 30-second spurts, stirring after each, until smooth, about 2 minutes (but every microwave heats at different strengths).
Use a heat-resistant spatula to ensure the mixture is fully melted and homogenous. Stir in the grapefruit zest and food coloring until the mixture is an even, light pink-orange grapefruit color.
Keep warm or remelt if necessary before using.
