New York Cheesecake Cookies


New York Cheesecake Cookies are a delicious treat that combines the classic flavor of New York-style cheesecake with the convenience of a cookie. 

Cheesecake cookies are typically made by combining cream cheese, sugar, and flour with traditional cheesecake ingredients like vanilla and lemon zest, then shaping the mixture into balls and baking until golden brown.

The result is a soft and creamy cookie with a rich cheesecake flavor. Some variations may include adding ingredients such as graham cracker crumbs, strawberry jam or chocolate chips to enhance the flavor of New York Cheesecake Cookies.


Cheesecake Cookies ingredients

  • 1 egg, separated
  • 3 oz cream cheese, softened
  • 1⁄4 cup of granulated sugar
  • 1 1⁄4 cups of graham crackers, finely crushed (1 sleeve)
  • 1 stick (8 tablespoons) of unsalted butter, softened
  • 1⁄2 cup of brown sugar, packed
  • 2 tsp of lemon zest
  • 1⁄2 tsp of vanilla extract
  • 1 cup of flour
  • 1 1⁄2 tsp of baking powder

Instructions

Start by Preheating the oven to 350 degrees F.

And in a large bowl, then stir together the graham cracker crumbs, and then flour and baking powder. 

Then in a medium bowl, and beat together the butter with the brown sugar using an electric hand mixer. And add the egg white then beat until well combined. And add to the graham cracker crumbs then blend until just combined.

Next, in a separate medium bowl, beat together the softened cream cheese with the granulated sugar, egg yolk, vanilla and lemon zest until well combined. Then set aside.

Then using a small ice cream scoop, scoop out the cookie dough then place it on a nonstick or parchment-lined baking sheet. (And if you do not have an ice scoop, then measure out the dough into scoops of about 2 tablespoons.) And flatten slightly, pressing your thumb in the centre of the ball to create a small bowl shape. 

Then repeat with the remaining dough. And spoon the cream cheese into the indents in the cookies.

And bake until the filling is barely set and the cookies are lightly golden for 13 minutes. 

Then allow cooling for 6 minutes on the baking sheets before removing them and then cooling completely on a wire rack. Enjoy!
