Ingredients For Beef Barley Soup

  • 2 lbs of chuck roast, trimmed of excess chunks of fat, cut into 3/4-inch cubes
  • 3 Tbsp of olive oil
  • 1 cup of pearl barley
  • 3 Tbsp of minced fresh parsley
  • 2 cups of chopped yellow onion (one large)
  • 3 Tbsp of tomato paste
  • 1 1/2 Tbsp of minced garlic (4 cloves)
  • 2 tsp of Worcestershire sauce
  • 2 tsp of minced fresh rosemary or 1/2 tsp dried
  • 2 (32 oz) of cartons low-sodium chicken broth or beef broth
  • 1 Tbsp of low-sodium soy sauce
  • 2 tsp of minced fresh thyme or 1/2 tsp dried
  • Freshly ground black pepper and Salt.
  • 1 1/2 cups of chopped carrots (about: 3)
  • 1 cup of chopped celery (2 ribs)

Instructions

First, heat one tbsp of olive oil in a large pot over medium-high heat. And dab beef dry then add 1/2 or 1/3 of the beef, and add just enough not to overcrowd. 

Then season with pepper and salt. And let sear until golden brown on the bottom, about 4 minutes then flip then cook 2 minutes longer.

After that transfer, the beef into the pot on a plate along with juices then repeat the process with the remaining beef adding another one tbsp of oil to the pot.

And add one tbsp of oil to now empty pot. And add carrots, celery then onion, and saute for 4 minutes.

And add garlic and tomato paste and saute for 2 minutes longer.

And pour in the broth, Worcestershire sauce, soy sauce, rosemary, and thyme then season with pepper and salt to taste. Then return beef to pot.

And bring mixture to a simmer and reduce heat to low, cover then simmer until beef is fairly tender, for 46 - 62 minutes.

And add barley, and cover then simmer until cooked through then the beef is tender, for 46 - 62 minutes longer.

And stir in parsley. Then serve warm. And Enjoy!
