Kevin’s Famous Chili Recreated Recipe


I’m a massive fan of The Office! Last summer, I posted a video recreating “Kevin’s Famous Chili” to my accounts, and it went viral overnight, gaining over two million views.

This recipe was the closest I could come up with to what Kevin described in the show, down to the ancho chiles, diced whole tomatoes, and undercooked onions.


INGREDIENTS

  • Olive oil
  • 2 onions, diced
  • 5 cloves garlic, minced
  • 2 jalapeños, finely chopped
  • 3 dried ancho chiles, rehydrated in hot water for 10 minutes and
  • finely chopped
  • 3 pounds of ground beef
  • 10–12 fresh plum tomatoes, peeled and diced
  • 2 tablespoons tomato paste
  • One 15-ounce can of dark kidney beans
  • One 15-ounce can of light kidney beans
  • One 15-ounce can of pinto beans
  • One 15-ounce can of black beans
  • One 15-ounce can of navy beans
  • 4 cups beef broth
  • 3 tablespoons cumin
  • 3 tablespoons coriander
  • 3 tablespoons oregano
  • Salt and pepper, to taste

Directions

Heat the olive oil in a large pot and gently sauté the onions, leaving them slightly undercooked (as Kevin instructs!).

Add the garlic, jalapeños, and ancho chiles, toasting them lightly.

Pour in the ground beef. Allow the beef to brown before adding the diced tomatoes, tomato paste, beans, beef broth, and spices.

Simmer for about 1 hour on medium-low heat, stirring frequently.
