Easy Vegetarian Chorizo Chili Recipe



I love this super quick and easy recipe! It’s so delicious and perfect for a cold winter night.

My family likes to set up toppings for everyone to choose their favorites and eat with cornbread slathered with honey butter!

Vegetarian Chorizo Chili Recipe


INGREDIENTS

  •  2 tablespoons oil
  •  6 ounces vegan chorizo
  •  1 large onion, chopped
  •  2 cloves garlic, finely grated
  •  1 teaspoon chili powder
  •  Two 15-ounce cans diced tomatoes with chiles
  •  3 cups vegetarian broth
  •  One 14.75-ounce can corn
  •  One 15-ounce can black beans, rinsed
  •  One 15-ounce can pinto beans, rinsed
  •  Salt and pepper, to taste

Directions

Sauté the onion and chorizo in oil until the onions are translucent.

Add the sautéed mixture to a slow cooker, then add all of the remaining ingredients. Cook on low for 4 hours.

When you’re ready to serve, add your desired toppings and enjoy!
