Easy Vegetarian Chorizo Chili
I love this super quick and easy recipe! It’s so delicious and perfect for a cold winter night.
My family likes to set up toppings for everyone to choose their favorites and eat with cornbread slathered with honey butter!
INGREDIENTS
- 2 tablespoons oil
- 6 ounces vegan chorizo
- 1 large onion, chopped
- 2 cloves garlic, finely grated
- 1 teaspoon chili powder
- Two 15-ounce cans diced tomatoes with chiles
- 3 cups vegetarian broth
- One 14.75-ounce can corn
- One 15-ounce can black beans, rinsed
- One 15-ounce can pinto beans, rinsed
- Salt and pepper, to taste
Directions
Sauté the onion and chorizo in oil until the onions are translucent.
Add the sautéed mixture to a slow cooker, then add all of the remaining ingredients. Cook on low for 4 hours.
When you’re ready to serve, add your desired toppings and enjoy!
