Easy Mango Chili Recipe

Easy Mango Chili This vegetarian chili is packed full of tasty, hearty goodness. Both vegetarians and non-vegetarians are sure to be satisfied.

Plus, its unexpected mango flavors will surprise even chili experts.


  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 1 ripe mango, chopped
  • One 14.5-ounce can of fire-roasted tomatoes
  • 2 teaspoons cumin (I use Simply Organic®)
  • 2 teaspoons coriander (I use Simply Organic®)
  • 2 teaspoons smoked paprika (I use Simply Organic®)• 3 cups vegetable stock
  • 3 tablespoons tomato paste
  • 2 teaspoons apple cider vinegar
  • One 15.5-ounce can of kidney beans
  • One 15.5-ounce can of black beans
  • 2 tablespoons cilantro


Add the olive oil to a pan over a low-medium flame and let it warm up.

Add in the chopped onions and sauté, constantly stirring, for about 20–25 minutes, until the onions are caramelized.

Add in all the remaining ingredients except for the cilantro. Let the chili simmer for about 10–15 minutes.

When ready to serve, top with cilantro and enjoy.
