Great Northern Bean White Chicken Chili Recipe


This chili is full of white beans, chicken broth, and warm spices like cumin, oregano, and cayenne pepper. It is the perfect soup recipe when you are tired of normal chili.

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • One 7-ounce can of green chiles
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper
  • Two 32-ounce boxes of chicken broth, or you can use your own stock
  • Two 14.5-ounce cans of great northern beans
  • 2 bone-in chicken breasts, boiled and shredded
  • 2 cups shredded Monterey Jack cheese
  • Salt and pepper, to taste
  • Garnishes: sour cream, cilantro

Directions

Put the oil in the bottom of a soup pot. Add the onion and cook until tender.

Add the garlic and green chiles. Cook for 1 minute. Stir so you don’t burn the garlic!

Add the cumin, oregano, and cayenne pepper. Cook for 1 minute. Stir so you don’t burn the garlic.

Add the chicken broth and beans. Add the shredded chicken and 1 cup of Monterey Jack cheese.

Add salt and pepper to taste. Let simmer on the stove for about 30 minutes.

Enjoy garnished with fresh cilantro and sour cream, plus the remaining cup of shredded cheese.
