Who says we can’t eat chili for breakfast? This recipe Cornbread Waffles with Chili is perfect for all you breakfast and brunch connoisseurs! It has become a staple brunch dish in my home since it offers such a unique and fun way to eat chili. Enjoy!


INGREDIENTS For Cornbread Waffles and Chili


For Chili:
  • 1 onion, medium diced
  • 3–5 cloves garlic, smashed and minced
  • 1 pound ground beef
  • 1 tablespoon garlic powder, or to taste
  • 1 tablespoon onion powder, or to taste
  • 1 tablespoon chili powder, or to taste
  • Salt and pepper
  • One 15-ounce can diced tomatoes, or 1 large tomato, diced
  • One 6-ounce can of tomato paste
  • One 15-ounce can of tomato sauce
  • Three 15-ounce cans of beans of choice (such as kidney beans, black beans, and chili beans)
  • ½–1 cup water
  • Garnish: chives, sour cream, and shredded cheddar (optional)

For Cornbread Waffle:
  • 1 teaspoon butter
  • 1 cup cornbread mix (I use Trader Joe’s® Corn Cookie Mix)
  • 1 cup flour
  • 1 egg
  • 1 tablespoon baking powder
  • ¼ cup melted butter
  • 1 teaspoon salt
  • ½ cup sugar (or other sweeteners of choice, such as maple syrup or honey)
  • 1 cup milk
  • 1–2 cups of corn

Directions For Cornbread Waffles with Chili

For Chili:

Sauté the onions and garlic together in a large pot. Add the ground beef and season with all the spices. Sauté until brown.

Once the meat is brown, add the diced tomatoes, tomato paste, and tomato sauce. Add all the cans of beans. Add ½–1 cup of water if the mixture is too thick.

Let simmer for 1 hour, or transfer to a slow cooker and simmer on low overnight or on high for 4 hours.

Serve on top of cornbread waffles.

For Cornbread Waffle:
 
Pre-heat a waffle maker. Once the waffle maker is heated, butter it.

While the waffle maker is heating up, mix all the waffle ingredients in a large bowl.

Place the batter in the waffle maker and close it. Flip it when the light indicates to flip it.

Remove the waffle when it is done cooking. Let cool for 5 minutes.

Top with chili and garnishes, and enjoy!
