Chipotle Apple Turkey Chili



Can I tell you a secret? I made this Turkey Chili for my husband (a self-proclaimed chili expert as a winner of at least one chili cook-off), and he couldn’t tell it was turkey chili.

Nor could he tell it had apples in it. He gave it a thumbs-up and still believes it was made with beef!


INGREDIENTS

  • 1 tablespoon olive oil or avocado oil
  • 1 pound ground turkey
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 1 bell pepper (any color), diced
  • 1 medium apple, cored and diced
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 ½ teaspoon chipotle powder
  • 1 teaspoon Mexican oregano
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • One 15-ounce can of black beans, drained
  • One 15-ounce can of kidney beans, drained


Directions

Heat the oil in a large pot over medium-high heat.
Add the ground turkey and cook until browned, using a wooden spoon to break the turkey into small pieces.
Add the garlic, onions, bell pepper, and apple. Cook, stirring until the vegetables are softened.
Add the remaining ingredients and stir well to combine.
Cover the pot and reduce the heat to low. Simmer the chili, stirring every once in a while, until it has thickened and the vegetables are cooked down.
Serve with any toppings you like.
