 Chili Dulce

Everyone who knows me knows that I never say no to a challenge.

During the Covid-19 pandemic, a group of my friends decided to host a chili cookoff because our local Chili Fest was canceled. I knew that this was a challenge that would surprise both my wife and friends.

I developed this recipe based on my personal taste in chili. I wanted this to be something on the sweeter side and something I would enjoy eating if I was cooking for our family.

To everyone’s surprise, I took home first place in the mild division


  • 2 pounds of ground beef
  • 1 large onion, diced
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Three 14.5-ounce cans of tomato sauce
  • 6 tablespoons brown sugar
  • One 15.25-ounce can of corn, drained
  • 2 medium red sweet peppers, diced


Brown the ground beef, onion, and garlic powder in a pot. Once the beef is browned, drain the pot.

Mix in the chili powder, salt, pepper, oregano, and cumin. Then mix in the tomato sauce and brown sugar. Stir in the corn and diced sweet peppers.

Simmer for 15–20 minutes, stirring occasionally
